What a beautiful day today! I managed to get out for a run at lunchtime and it was lovely – a little breezy still, but there was a real warmth in the sun and a lot of the trees are starting to show signs of greenery. That seemed appropriate today what with it being St Patricks Day. It also seemed appropriate that my post run snack should be something green – let me introduce the Shamrock Shake!
I love the mint choc chip flavour combo, so I thought I’d try and recreate it in a smoothie. I think this was pretty good – I included some spinach for an extra nutrient hit, but I promise you can’t taste it! I’m heads down with work and an assignment at the moment, so this is a great quick and easy snack.
Ingredients:
250ml milk of choice (I used almond milk)
1 frozen banana
Handful spinach (about 40g)
6-8 fresh mint leaves
Cocoa nibs or dark chocolate chips
Blend the first four ingredients together, then sprinkle with the chocolate. And voila!
